While teachers feed their students’ minds, schools also need to feed students’ bellies. Over 30 million children eat at least one meal a day at school. That’s one-tenth of our entire country! Even if you’ve been out of school for years, you probably still remember the typical school lunch of greasy pizzas and burgers, potato fries and soda. Throw in the occasional unhealthy snack from the vending machine, and this is the picture of the common food experience of millions of schoolchildren daily. What are missing from this meal are fresh fruits and vegetables, whole grains and other healthy foods. Healthy food creates healthy bodies: helping to curb growing rates of obesity, high blood pressure and diabetes. With almost 20% of global carbon emissions originating – in one way or another – from the global food system, greening food supplies and cafeterias greatly reduces a schools’ carbon footprint and is one big step on the path to becoming a “green school”. And so while switching preserved foods for fresh fruits and vegetables, why don’t you bring your teachers and principals a fresh, local apple and tell them that “O” stands for “Organic!”
